Campfire Nachos
- Tortilla chips
- Williams Cheese Hot Pepper
- Williams Cheese Colby Jack
- 1 can of black beans
- 1 can of black olives
- 2 bell peppers
- Green onion
- Cilantro
- 1 lime
Method
Trim and thinly slice green onion, separating greens from whites
Core, deseed, and dice bell pepper
Remove the liquid from the beans and olives
Roughly chop cilantro
Shred Hot Pepper and Colby Jack cheeses - No judgement on the amount you want to shred (The cheesier the better in our opinion)
Cut lime into 4 wedges
Layer the cast iron with tortilla chips, then add bell pepper, whites from the green onion, beans, olives and cheese
Repeat the last step 3-4 more times
Cover with tinfoil
Add to the campfire and cook for about 15
Remove from fire
Add greens from the green onion and cilantro
Squeeze juice from lime
