Swiss Cheese Meatloaf

Ingredients

  • 2 eggs
  • 16 buttery crackers, crushed
  • 1 small onion, chopped
  • 2 tsp minced garlic
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp rubbed sage
  • 1 cup shredded Amish Country Swiss Cheese, divided
  • 1 pound lean ground beef

Method

    Preheat oven to 375°F. Grease a 3×7 loaf pan. Beat the eggs in a bowl. Whisk in the cracker crumbs, onion, garlic, salt, pepper and sage. Set aside 3 Tbs. of the Swiss Cheese to use as a topping, and stir the rest into the egg mixture along with the ground beef. Pack the mixture into the prepared loaf pan. Bake in the preheated oven until no longer pink in the center, about 1 hour. About 2 minutes before the meatloaf is ready, sprinkle with the reserved Swiss cheese and return to the oven until melted.
